Ice Block Flashbacks

I have been trying to think of some yummy treats to cure my sweet cravings. When I was in the store the other day I spotted these ice block trays and knew that I had to have them. I immediately was transported straight back to my child hood where these were often the treats in our house home made ice blocks.

You can put SO many things into these molds and they can either be whole or blended up into a mixture. I decided to keep these ones with whole fruit pieces for now. I added some berries, coconut water and shredded coconut. Frozen over night and then next morning I was eating one for breakfast whoops! Definitely not my intention but I couldn’t wait to have one.

Burgers and Mocktails.

Yes Mocktails . . . because it’s at this time of year you realise what all those summer ciders and cocktails have done to your health and your waistline.  So Miss S is going without any alcohol for Lent and Miss L is well, drinking a lot less.  We had some close lady friends around the other day and decided to treat them to a cocktail minus all the ‘bad’ stuff. Get inspired (and yes you can add a little booze if you ‘need’ it!)

While we were at it we made delish mushroom burgers inspired those amazing ones we had in Byron bay that time and some YUM polenta crusted sweet potato fries made by our resident Brit, Zoe.  You can find a similar recipe for these here .

Strawberry Splendour.

A really really easy and somewhat healthy fruit concoction.  You will need:

  • Coconut Water
  • Strawberries
  • Lemon
  • Mint
  • A good blender
  • Some fancy glasses to make you feel like you’re devouring a naughty cocktail. (FYI those glasses in the first pic are not what I’m talking about.



Place half the container (punnet as us Kiwi’s like to call it) of strawberries, 3 cups coconut water, juice of one lemon,
and a handful of mint leaves in to a cocktail blender.


Pour in to fancy glasses and decorate with strawberries, mint and a cheesy bendy straw.

Mushroom Burgers (we’ll spare you the cheesy name for these)

Perfect vegetarian fare but mushies are ‘meaty’ enough for even the most carnivorous of eaters.  You will need:

  • Portobella Mushrooms (one for each burger)
  • Garlic
  • Oil Spray
  • Burger Buns (sourdough is a good option)
  • Your favourite Burger fillings we used Avocado, Sprouts, Tomato, Pineapple, Beetroot, Fancy lettuce, Goat’s Feta (a must have with mushrooms, basil pesto and hot sauce because we’re fiends for it!)


Finely chop garlic and sprinkle over Mushrooms (omit if you don’t like garlic?!!) and spray with a little oil (what ever you have is fine)  We cooked ours on a BBQ but of course grill in the oven if you prefer.


Prep everything else that you desire in your burger while you have the burger buns toasting slightly in the oven.




Smother each half of the bun with sauce ours had the pesto, avocado and goats cheese and assemble whatever way you want its going to be impossible almost to place in your mouth anyway. Top with a big drizzle of hot sauce
ooooo boy.
