You may recall we had a bit of a “girls day in” high tea on the weekend. Along with helping out the birthday girl to set up we also created some pretty amazing (to look at and eat) cupcakes. We’re both not exactly Martha Stewart in the kitchen but enjoy fun new things none the less so here’s our creation . . . .
Cupcake batter (so this was out first cheat, we didn’t have much time to start from scratch) we used two packets to make 18 good sized cakes. The packet also asked for 4 eggs, 1/2 cup milk and 120g of softened butter, additional ingredients will differ depending on the packet you get. Must be vanilla!!
A few bowls.
First make the batter according to the directions on your packet (or if you’re a wizz in the kitchen create your own vanilla cupcakes from scratch).
Next you divide the batter into four bowls and add a little food colouring to each bowl. We went for red, yellow, green and purple (yeah that horrible looking colour is purple, don’t worry it cooks fine!)
To get the ‘marbled/multi’ effect spoon little bits of each coloured batter in to the cupcake cases. Make sure you don’t mix the colours together as you’ll end up with some not so pretty looking ones . . .
Place in the oven for 20-25 mins at 180°C.
We placed ours too close to the top of the oven so the top cooked too quick hence the rather lopsided look. Easily fixed by cutting off the top to make a flat surface for icing.
Icing: We used cream cheese (because its the best!) So you’ll need 60g soft butter (not melted!), between 4-6 cups icing sugar, 120g soft cream cheese. Use an electric beater to beat until light and fluffy and the colour is not so ‘buttery’. Place into a piping bag and ice which ever way you want.
We placed chocolate freckles in between each cupcake to emphasise the multi colours.
