Well its coming up Anzac day this week. For those of you who do not know what Anzac day is it was originally a day to honour the members of the Australian and New Zealand Army Corps who fought at Gallipoli during World War I. While it still represents that today it is more of a day to recognise all soldiers in the military.
Where do these biscuits come in to the war? Good question. It was said that wives sent these biscuits to the soldiers during that time as the ingredients were long lasting. I really wanted to make a batch that was different so started to hunt for some healthier options and found one on the Healthy Chef that I thought I would try. The main ingredients are oats and its really up to you from there. I decided to add goji berries and cacao nibs to these. They were so easy and the cookie jar was empty after two days so that must be a good sign!
Recipe adapted from The Healthy Chef recipe. I used coconut oil and shredded coconut rather than desicated but it depends on the texture you want. The Goji berries and cacao nibs added a great extra flavour but you could really add anything to these or keep them plain with the coconut coming through. YUM! I would recommend not blending the ingredients for too long as the texture is one of the best parts of these cookies.
