Cypriot Grain Salad

A few weeks back I got to the letter ‘G’ for my alphabet dates. So what better thing to do than go and get some delicious Greek food!  I had been dying to try Hellenic Republic, one of George Calombaris‘s restaurants and this salad was one of the tastiest things on the menu. If you are in Melbourne do go to the restaurant order the banquet menu and enjoy. If you are not in Melbourne don’t worry as you will just have to bring the restaurant to your kitchen.

You can find the original recipe in the Hellenic Republic Cookbooks or lots of adaptations on the internet. The recipe I used first was from here but I have changed lots of the ingredients each time I have made it. You can substitute different things each time such as the currants for goji berries. Pretty much you add in your favourite nuts, grains, legumes and herbs to get the best flavour for you.

The salad itself is very filling but if you are wanting to create more of a meal for a group you can serve it with warm bread, cheese, olives and dips for a delicious meal. Get creative and enjoy!
